Blinis with kiwi

Ingredients

  • 100 g buckwheat flour
  • 100 g whole wheat flour
  • 250 ml milk
  • 150 g cottage cheese
  • 2 eggs
  • 2 tablespoons sugar
  • 1 pinch of salt
  • 2 teaspoons baking soda
  • Oil for frying
  • 4 kiwis
  • 2 teaspoons natural yoghurt
  • 2 teaspoons honey

Instructions

  1. Whisk the milk with cream cheese, eggs, sugar and salt, add the flour and baking powder while stirring and mix to a smooth dough. Let rest for about 30 minutes.
  2. Bake pancakes in portions in hot oil in a pan. For this, add 2 tablespoons of dough to the hot oil, fry for about 1-2 minutes until golden brown, turn and bake on the other side also until golden brown. Keep warm in the oven.
  3. Peel and slice the kiwis. Alternately stack with the pancakes, add some yoghurt and serve drizzled with honey.
