Salad with green beans, mozzarella, tomatoes, pine nuts and raisins

Ingredients

  • 400 g green beans
  • 1 onion
  • 300 g cocktail tomato
  • 1 head Lollo bionda
  • 300 g mini mozzarella balls
  • 3 tablespoons white wine vinegar
  • 6 tablespoons vegetable oil
  • 1 teaspoon honey
  • Salt
  • Pepper from the grinder
  • 80 g pine nuts
  • 2 tablespoons currants

Instructions

  1. Clean the beans, wash them, cut off the ends and blanch in boiling salted water for 6-8 minutes, remove, rinse with cold water, drain well. Peel the onion and chop finely. Wash and quarter the tomatoes. Clean the lettuce, wash, dry and pluck it into bite-sized pieces. Drain the mozzarella.
  2. Arrange all ingredients on plates. Mix a marinade of vinegar, oil, honey, salt and pepper, mix with onions, season and drizzle over the salad. Fry the pine nuts in a frying pan without fat, sprinkle over the salad with the currants and serve.
