Tomato and herb soup

Ingredients

  • 1 kg of very ripe tomatoes
  • 3 onions
  • 5 garlic cloves
  • 2 tablespoons olive oil
  • 1 handful of leeks
  • 1 handful of oregano
  • 1 handful of thyme
  • 1 handful of basil
  • 1 handful of marjoram
  • 1 handful of lovage
  • 1 ½ litre of water
  • 1 tablespoon vegetable broth (powder)
  • 4 small potatoes
  • 1 pinch of nutmeg
  • Salt (to taste)
  • Pepper (to taste)

Instructions

  1. Dice the onions and press the garlic cloves. Steam with the tomatoes in olive oil. Then peel the potatoes, cut them into small pieces and stir in the greens to the tomatoes, add with water.
  2. Cook everything until the potatoes are soft. Finally, add the herbs and puree. Season the soup with salt, pepper and nutmeg.
